  • 1/2 cup pecans, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the acorn squash.
  3. Slice the squash into 1/2-inch to 3/4-inch rings or half-moons. Remove seeds and stringy bits.
  4. Arrange the squash slices in a single layer on a baking sheet.
  5. In a small bowl, combine the packed brown sugar, melted butter, cinnamon (if using), and salt. Stir until it forms a thick paste.
  6. Spoon the mixture over the squash slices and spread evenly.
  7. Sprinkle the chopped pecans on top, pressing them gently into the mixture.
  8. Bake for 25 to 30 minutes, until the squash is tender and the edges are caramelized. Rotate the pan halfway through. If pecans brown too quickly, tent with foil.
