  • 2 cups (400g) granulated sugar
  • 3/4 cup (65g) unsweetened cocoa powder (natural, not Dutch-processed)
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon fine sea salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 1/2 cup (120ml) vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) hot coffee (freshly brewed)
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 1/2 cups (420g) powdered sugar, sifted
  • 3/4 cup (65g) unsweetened cocoa powder (for frosting)
  • 1/4 cup (60ml) heavy cream (plus more as needed)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1/4 teaspoon salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or cooking spray, line bottoms with parchment paper circles, grease parchment, and dust pans with cocoa powder.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt for about 30 seconds.
  3. In a separate bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix on low speed (or by hand) until just combined. Batter will be thick.
  5. With mixer on low, slowly pour in hot coffee and mix until batter is smooth and glossy, about 30 seconds. Batter will be thin.
  6. Divide batter evenly between prepared pans (about 650g each). Bake for 30-35 minutes, until a toothpick inserted in center comes out with a few moist crumbs.
  7. Let cakes cool in pans for 10 minutes, then run a knife around edges and invert onto wire rack. Remove parchment and cool completely.
  8. For frosting: In a stand mixer with paddle attachment, beat softened butter on medium speed until creamy, about 2 minutes. Sift together powdered sugar and cocoa powder. Add to butter in three additions, alternating with heavy cream. Beat on low to combine, then increase to medium-high and beat 2-3 minutes until light and fluffy. Add vanilla and salt, beat 1 more minute. Adjust consistency with more cream or powdered sugar as needed.
  9. Place one cake layer on serving plate. Spread about 1 cup frosting evenly on top. Place second layer on top. Apply a thin crumb coat, refrigerate 15 minutes, then apply final layer of frosting. Decorate as desired.

Notes

Use room temperature ingredients for best results. Don’t overmix the batter. Level cakes if domed. Chill cake before slicing for cleaner slices. Cake tastes even better the next day.
