Best Easy Bratwurst and Sauerkraut Skillet

A quick and easy one-skillet dinner featuring juicy bratwurst, caramelized onions, and tender cabbage. This budget-friendly meal comes together in under 30 minutes and is a crowd-pleaser for the whole family.

  • 1 pound pre-cooked bratwurst, sliced into ½-inch rounds
  • 1 (14-ounce) can or jar sauerkraut, drained but not rinsed
  • ½ head green cabbage, thinly sliced (about 4 cups)
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 medium apple (Granny Smith), grated
  • ½ cup low-sodium chicken broth
  • 1 teaspoon caraway seeds (optional)
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients first: slice bratwurst into ½-inch rounds, thinly slice onion and cabbage, mince garlic, grate apple, and drain sauerkraut.
  2. Heat a large 12-inch skillet over medium-high heat. Add butter and let it melt until foamy but not browned.
  3. Add sliced bratwurst in a single layer. Cook without moving for 3-4 minutes until browned on the bottom. Flip and cook for another 2-3 minutes. Transfer to a plate and set aside.
  4. Reduce heat to medium. Add sliced onion to the same skillet. Cook, stirring occasionally, for 8-10 minutes until soft and starting to caramelize. Add a splash of chicken broth if sticking.
  5. Add minced garlic and caraway seeds. Stir and cook for 30 seconds until fragrant.
  6. Add sliced cabbage and grated apple. Stir together. Cook for 5 minutes, stirring occasionally, until cabbage starts to wilt.
  7. Add drained sauerkraut and remaining chicken broth. Stir to combine. Nestle browned bratwurst back into the skillet.
  8. Cover skillet with a lid. Reduce heat to low and simmer for 10 minutes.
  9. Remove lid and increase heat to medium-high. Cook for 2-3 minutes to let excess liquid evaporate.
  10. Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley if desired.

Notes

Don’t skip browning the bratwurst for maximum flavor. Let onions caramelize properly for sweetness. Watch the salt as bratwurst and sauerkraut are already salty. Let the dish rest a few minutes before serving. Leftovers keep in the fridge for up to 4 days and flavors improve overnight. Not recommended for freezing.
