Instructions

  1. Prepare the bread: Cut brioche or challah into 1-inch thick slices, then into 1 to 1.5-inch cubes (about 8-10 cups). If using fresh bread, spread on a baking sheet and let dry for 30 minutes.
  2. Make the custard: In a large bowl, whisk together eggnog, eggs, sugar, vanilla, nutmeg, cinnamon, and salt until smooth and pale yellow.
  3. Assemble the bake: Grease a 9×13-inch baking dish. Layer half the bread cubes in the dish, pour half the custard over, and press gently. Add remaining bread and custard, tossing to coat evenly.
