  • 6 cups (180 grams) crispy rice cereal
  • Flaky sea salt (optional, for finishing)
  • Nonstick cooking spray

Instructions

  1. Prep your molds: Lightly spray the inside of each helmet cavity with nonstick cooking spray. Use a paper towel to wipe away any excess—you want a thin, even coating, not puddles of oil. Set the molds on a baking sheet for stability.
  2. Measure your cereal: In a large mixing bowl, measure out 6 cups (180 grams) of crispy rice cereal. Set it aside near the stove.
  3. Melt the butter: Place your large saucepan over medium heat. Add 6 tablespoons (85 grams) of unsalted butter. Let it melt completely, then continue cooking for another 1-2 minutes, swirling the pan occasionally, until the butter turns a light golden brown and smells nutty.
  4. Add the marshmallows: Pour all 10 ounces (283 grams) of mini marshmallows into the pan. Reduce the heat to low. Stir constantly with your silicone spatula until the marshmallows are completely melted and smooth, about 3-4 minutes.
  5. Season the mixture: Remove the pan from heat. Stir in 1 teaspoon (5 ml) of vanilla extract and ¼ teaspoon of salt. Mix until fully combined.
  6. Combine with cereal: Pour the hot marshmallow mixture over the cereal in the bowl. Fold gently with your spatula until all the cereal is evenly coated. Work quickly but carefully.
  7. Fill the molds: While the mixture is still warm (but not burning hot), spoon it into the helmet cavities. Press it down firmly with your offset spatula or a lightly greased finger. Make sure you fill every corner, especially the facemask area. Overfill slightly.
  8. Let them set: Allow the helmets to cool at room temperature for about 30 minutes. Don’t rush this by putting them in the fridge.
  9. Unmold carefully: Gently flex the silicone mold to loosen each helmet. If they stick, let them sit for another 10 minutes. Pop each helmet out and place it on a parchment-lined tray.
  10. Optional finishing touch: Sprinkle a tiny pinch of flaky sea salt on top of each helmet while they’re still slightly warm.

Notes

For the best texture, use fresh marshmallows and fresh crispy rice cereal. Don’t overheat the marshmallows—low and slow is key. Grease your hands with nonstick cooking spray when pressing the mixture into molds. These are best made the day you’re serving them for maximum crunch. Store leftovers in an airtight container at room temperature for up to 3 days. Do not refrigerate.
