  • 23 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 pounds boneless skinless chicken thighs, cut into 1.5-inch chunks
  • Wooden or metal skewers
  • Optional: 1 red bell pepper, cut into chunks
  • Optional: 1 small red onion, cut into wedges
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Make the marinade: In a medium bowl, whisk together honey, minced chipotle peppers, adobo sauce, minced garlic, olive oil, lime juice, smoked paprika, cumin, salt, and black pepper. Set aside about 3 tablespoons for basting later.
  2. Prepare the chicken: Cut chicken thighs into roughly 1.5-inch chunks. Place in a large bowl or zip-top bag and pour remaining marinade over it. Toss well to coat. Cover and refrigerate for at least 30 minutes, ideally 2-4 hours.
  3. Soak the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Preheat the grill: Heat grill to medium-high heat (400-450°F). Clean and oil the grates well.
  5. Thread the skewers: Remove chicken from marinade (discard used marinade) and thread onto skewers, leaving space between pieces. If using vegetables, alternate chicken with bell pepper and onion.
  6. Grill the skewers: Place on hot grill and cook for 4-5 minutes per side, turning once, until chicken is cooked through (internal temperature 165°F). During the last 2 minutes, brush with reserved marinade.
  7. Rest and serve: Remove from grill and let rest for 5 minutes. Sprinkle with fresh cilantro and serve with lime wedges.

Notes

Don’t skip the resting time after grilling. Watch the sugar content as honey can burn quickly. Oil the grates well to prevent sticking. For a milder version, use only 1 chipotle pepper and reduce adobo sauce to 1 tablespoon. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 2 months.
