This homemade pumpkin spice syrup for coffee is quick, easy, and made with simple pantry staples. It turns an ordinary cup of coffee into a cozy fall treat without the weird aftertaste of store-bought versions.

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup maple syrup
  • 2 tablespoons pumpkin puree
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the water, sugar, and maple syrup in a medium saucepan over medium heat. Stir gently with a whisk until the sugar dissolves completely, about 2-3 minutes.
  2. Whisk in the pumpkin puree until fully incorporated and smooth, about 30 seconds.
  3. Add all the spices and the salt. Whisk until evenly distributed.
  4. Bring the mixture to a gentle simmer (small bubbles breaking the surface, not a rolling boil).
  5. Simmer for 5-7 minutes, stirring occasionally. The syrup will thicken slightly.
  6. Remove the pot from the heat and stir in the vanilla extract. Let cool in the pot for 5 minutes.
  7. Strain the syrup through a fine-mesh strainer into a heat-safe glass measuring cup or directly into a storage jar.
  8. Let the syrup cool completely at room temperature (about 30-45 minutes) before covering and refrigerating.
  9. Shake the jar well before each use.

Notes

Do not boil aggressively to prevent crystallization. Let syrup cool before tasting as flavors change. Syrup keeps up to 3 weeks in the refrigerator. Double the batch for longer use.
