  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 8 slider buns
  • 4 slices American cheese, each cut into quarters
  • 2 tablespoons butter, softened
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon pickle brine
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Shredded lettuce (optional)
  • Thinly sliced tomato (optional)
  • Pickle chips (optional)
  • Thinly sliced red onion (optional)

Instructions

  1. Make the special sauce: In a small bowl, combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, pickle brine, smoked paprika, garlic powder, and cayenne (if using). Whisk until smooth. Set aside.
  2. Prepare the patties: In a mixing bowl, combine ground beef, salt, pepper, garlic powder, and onion powder. Mix gently with your hands. Divide into 8 equal portions (about 2 ounces each). Shape into thin patties slightly larger than the buns. Press a small indent in the center of each patty with your thumb.
  3. Toast the buns: Spread softened butter on the cut sides of each slider bun. Heat a large skillet or griddle over medium heat. Place buns cut-side down and cook for 1-2 minutes until golden brown. Remove and set aside.
  4. Cook the patties: In the same skillet, increase heat to medium-high. Place patties in the skillet, leaving space between each. Cook for 2-3 minutes on the first side until edges are brown and a crust forms. Flip with a thin spatula. Immediately place two small squares of American cheese on each patty. Cook for another 1-2 minutes until cheese is melted and internal temperature reaches 160°F (71°C) for well-done.
  5. Assemble the sliders: Place a cheesy patty on the bottom half of each toasted bun. Add a generous dollop of special sauce. Add optional toppings if desired. Top with the other half of the bun.
  6. Serve immediately while cheese is gooey and buns are warm.

Notes

Don’t press down on the patties while cooking to keep them juicy. For a big batch, keep cooked patties warm in a 200°F (93°C) oven. The sauce can be made a day ahead and stored in the fridge.
