  • 1 lb (450g) ground beef (80/20)
  • 1/3 cup (40g) breadcrumbs (plain or Italian-style)
  • 1/4 cup (60ml) milk (whole or 2%)
  • 1/4 cup grated yellow onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup (for the loaf)
  • 1 tsp Dijon mustard
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup (60ml) ketchup (for the glaze)
  • 2 tbsp brown sugar (for the glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×4 inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a medium mixing bowl, combine breadcrumbs and milk. Let sit for 5 minutes to form a panade.
  3. Add grated onion, minced garlic, Worcestershire sauce, 2 tbsp ketchup, Dijon mustard, dried thyme, salt, and pepper to the panade. Stir until well combined.
  4. Add the egg and mix thoroughly. Then add the ground beef and gently mix with a fork or spatula until just combined. Do not overmix.
  5. Transfer the mixture to the prepared loaf pan and gently press into an even layer.
  6. In a small bowl, whisk together 1/4 cup ketchup and brown sugar to make the glaze.
  7. Spoon the glaze over the meatloaf and spread evenly.
  8. Place the loaf pan on a rimmed baking sheet and bake for 35-40 minutes, or until an instant-read thermometer inserted into the center registers 160°F (71°C).
  9. Let the meatloaf rest in the pan for at least 10 minutes. Then lift out using the parchment paper, slice, and serve.

Notes

For best results, use 80/20 ground beef for moisture. Grate the onion instead of chopping to avoid crunchy bits. Let the meatloaf rest for 10 minutes after baking to retain juices. If doubling the recipe, use a 9×5 inch loaf pan or two 8×4 inch pans and increase baking time by 10-15 minutes.
