  • 8 ounces linguine or fettuccine pasta
  • Salt, for pasta water
  • 12 ounces large shrimp, peeled and deveined
  • 6 ounces andouille sausage, sliced
  • 1 cup fresh corn kernels (about 2 ears)
  • 2 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 4 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Fresh parsley, chopped (for garnish)
  • Juice of half a lemon

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente, about 9–11 minutes. Reserve 1/2 cup of pasta water before draining. Set pasta aside.
  2. In a large skillet over medium heat, add 1 tablespoon of butter. Once melted, add sliced andouille sausage. Cook for 4–5 minutes until browned and slightly crisp. Remove sausage and set aside, leaving rendered fat in the pan.
  3. Add chopped onion to the skillet and cook for 3 minutes until softened and translucent. Add minced garlic and cook for another 30 seconds until fragrant, being careful not to burn the garlic.
  4. Push onions and garlic to the side of the pan. Add shrimp in a single layer, sprinkle with 1 teaspoon Cajun seasoning and smoked paprika. Cook shrimp about 2 minutes per side until pink and just cooked through. Add corn kernels and stir everything together, cooking for another minute.
  5. Reduce heat to low. Stir in remaining 3 tablespoons of butter until melted. Pour in chicken broth and heavy cream, stirring gently. Let sauce simmer for 2–3 minutes until slightly thickened. If sauce is too thick, add reserved pasta water a tablespoon at a time to reach desired consistency.
  6. Add cooked pasta and browned sausage back into the skillet. Toss gently to coat pasta evenly with sauce. Squeeze in lemon juice and sprinkle crushed red pepper flakes if using. Taste and adjust seasoning with salt and pepper as needed.
  7. Remove from heat and sprinkle chopped fresh parsley over the top. Serve immediately.

Notes

Do not overcook shrimp to avoid rubbery texture; cook about 2 minutes per side. Reserve pasta water to adjust sauce consistency for a silky finish. Use moderate heat to prevent butter from burning. For dairy-free, substitute butter with olive oil and heavy cream with coconut cream. Gluten-free pasta or zucchini noodles can be used as alternatives.
