A quick and hearty taco soup that comes together in just 30 minutes, perfect for busy weeknights. This one-pot wonder is packed with ground beef, beans, corn, and fire-roasted tomatoes for a warm, comforting meal.

Ingredients

Scale
  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (Ortega or homemade)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes with green chiles (like Rotel)
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 2 cups beef broth (low-sodium preferred)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste (start with ½ teaspoon salt and ¼ teaspoon pepper)
  • Optional toppings: shredded cheddar cheese, sour cream, chopped cilantro, sliced jalapeños, crushed tortilla chips

Instructions

  1. Brown the meat: Place your large pot over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until it’s no longer pink—about 5-7 minutes. If there’s a lot of fat, drain it off, leaving about a tablespoon for flavor.
  2. Sauté the aromatics: Add the diced onion to the pot with the beef. Cook for 2-3 minutes until the onion starts to soften. Then add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the seasonings: Sprinkle in the taco seasoning, cumin, and chili powder. Stir everything together and let it cook for about 1 minute to toast the spices.
  4. Pour in the liquids: Add the diced tomatoes with green chiles, fire-roasted tomatoes, and beef broth. Stir well, scraping up any brown bits from the bottom of the pot.
  5. Add the beans and corn: Stir in the drained black beans, kidney beans, and corn. Bring the soup to a boil, then reduce the heat to low and let it simmer for 15-20 minutes.
  6. Taste and adjust: After simmering, give the soup a taste. Add salt and pepper as needed. Start with ½ teaspoon salt and ¼ teaspoon pepper, then adjust.
  7. Serve and garnish: Ladle the soup into bowls and top with your favorite garnishes like sour cream, shredded cheddar, crushed tortilla chips, and fresh cilantro.

Notes

For best flavor, use fire-roasted tomatoes and toast the spices before adding liquids. The soup can be made ahead and tastes even better the next day. For a vegetarian version, skip the beef and add an extra can of beans and vegetable broth.
