  • 1/3 cup packed brown sugar
  • 1/2 cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center.
  2. Peel, core, and slice 2 medium apples into 1/2-inch thick pieces. Toss with 1/4 teaspoon of the cinnamon in a medium bowl. Let sit while making the topping.
  3. In a small bowl, combine 1/2 cup rolled oats, 1/3 cup packed brown sugar, and remaining 3/4 teaspoon cinnamon. Stir with a fork.
  4. Add 4 tablespoons room temperature unsalted butter, cut into small cubes. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture is crumbly with pea-sized butter pieces.
  5. Divide the cinnamon-coated apple slices evenly between two 8-ounce ramekins. Pack them in gently.
  6. Sprinkle the oat topping evenly over the apples. Do not press down.
  7. Place ramekins on a baking sheet and bake for 25-30 minutes, until topping is golden brown and apples are bubbling around the edges. If topping browns too quickly, tent loosely with foil.
  8. Let cool for 5 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Use room temperature butter for best texture. Don’t overwork the topping. Let apples macerate with cinnamon for 5 minutes before assembling. Place ramekins on a baking sheet to catch drips. For gluten-free, use certified gluten-free rolled oats. For vegan, substitute with vegan butter.
