This cozy blueberry overnight baked oatmeal is a warm, comforting breakfast that feels like a treat but is secretly one of the easiest things you’ll ever make. With creamy oats, juicy blueberries, and a slightly caramelized top, it’s perfect for slow mornings or brunch gatherings.

Ingredients

Scale
  • 2 cups (180 g) rolled oats
  • 1 ½ cups (210 g) fresh or frozen blueberries
  • 2 cups (480 ml) milk (whole or 2%)
  • ⅓ cup (80 ml) pure maple syrup
  • 1 large egg, lightly beaten
  • 3 tablespoons (42 g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • Optional toppings: sliced almonds, chopped pecans, extra maple syrup, Greek yogurt

Instructions

  1. Grease an 8×8-inch baking dish with butter or cooking spray.
  2. In a small bowl, whisk together rolled oats, baking powder, salt, and cinnamon.
  3. In a medium bowl, whisk together milk, maple syrup, beaten egg, melted butter, and vanilla extract until smooth.
  4. Spread the dry oat mixture evenly in the prepared baking dish. Scatter blueberries over the top. Pour the wet mixture evenly over the oats and berries. Gently shake the dish or press down with a spatula to ensure all oats are submerged.
  5. Cover the dish tightly with plastic wrap or a lid and refrigerate for at least 6 hours or overnight.
  6. In the morning, preheat the oven to 375°F (190°C). Remove the plastic wrap.
  7. Bake for 30-35 minutes, until the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly.
  8. Let the baked oatmeal cool for 5-10 minutes before serving.

Notes

For best texture, use old-fashioned rolled oats, not quick-cooking or steel-cut. If using frozen blueberries, do not thaw them first. Let the oatmeal rest after baking for easier slicing. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
