  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • ½ cup (120ml) buttermilk
  • ¼ cup (60ml) fresh orange juice
  • Zest of 2 large oranges (about 2 tablespoons)
  • 1 teaspoon vanilla extract
  • 1 ½ cups (170g) fresh or frozen cranberries
  • 1 cup (120g) powdered sugar (for glaze)
  • 23 tablespoons fresh orange juice (for glaze)
  • 1 teaspoon orange zest (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan; line with parchment paper if desired.
  2. In a small bowl, combine cranberries with 2 tablespoons of the granulated sugar and 1 tablespoon of the orange juice. Set aside to macerate for about 10 minutes.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a separate large bowl, whisk together remaining sugar and vegetable oil until combined. Add eggs one at a time, whisking well after each. Stir in buttermilk, remaining orange juice, orange zest, and vanilla extract.
  5. Pour wet ingredients into dry ingredients; fold gently with a rubber spatula until just combined. Do not overmix.
  6. Drain excess liquid from macerated cranberries (optional: add liquid to batter). Gently fold cranberries into batter.
  7. Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  8. Cool in pan on a wire rack for 15 minutes, then lift out and cool completely on rack.
  9. For glaze: whisk together powdered sugar, 2-3 tablespoons orange juice, and 1 teaspoon orange zest. Drizzle over cooled bread.

Notes

For best texture, use room temperature eggs and buttermilk. Do not overmix batter. Let bread cool completely before slicing to prevent crumbling. Bread can be stored at room temperature for up to 4 days or frozen for up to 3 months.
