Cozy Crockpot Fall Harvest Vegetable Stew: Easy One-Pot Meal

A deeply savory, rich, and completely plant-based stew made with sweet potatoes, carrots, and fire-roasted tomatoes, slow-cooked to perfection in a crockpot. This hands-off meal is perfect for chilly days and gets even better as leftovers.

  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 3 large carrots, peeled and sliced into half-moons
  • 3 ribs celery, sliced
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional: 1 cup chopped kale or spinach, 1 can drained and rinsed chickpeas or white beans

Instructions

  1. Prep the Vegetables: Wash and peel sweet potatoes and carrots. Dice sweet potatoes into 1-inch cubes. Slice carrots into 1/4-inch half-moons. Dice onion, slice celery, and mince garlic.
  2. Layer in the Crockpot: Place diced sweet potatoes, carrots, celery, and onion into a 5- to 6-quart crockpot. Add minced garlic on top.
  3. Add Tomatoes and Seasonings: Pour undrained fire-roasted diced tomatoes over vegetables. Add tomato paste, dried thyme, crushed rosemary, smoked paprika, and bay leaves. Sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper.
  4. Pour in Broth: Pour vegetable broth over everything. Gently stir to combine tomato paste and spices into broth.
  5. Cook Low and Slow: Cover and cook on Low for 6-8 hours or on High for 3-4 hours, until sweet potatoes and carrots are fork-tender.
  6. Finish with Balsamic Vinegar: About 10 minutes before serving, stir in balsamic vinegar. Taste and adjust salt and pepper as needed.
  7. Remove Bay Leaves and Serve: Remove bay leaves. Ladle into bowls. If using kale or spinach, stir in a couple of handfuls and let wilt for 2 minutes before serving.

Notes

For a thicker stew, mash about 1/2 cup of cooked sweet potatoes against the side of the pot and stir back in. If freezing, add balsamic vinegar after thawing and reheating for best flavor. Don’t peek too often during cooking to avoid heat loss.
