A happy accident turned into a beloved recipe—this creamy, cheesy corn casserole with a hint of green chile warmth is the ultimate comfort food. Quick to make with simple ingredients, it’s perfect for cozy nights, potlucks, or holiday dinners.

Ingredients

Scale
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 1½ cups sharp cheddar cheese, shredded (divided: 1¼ cups for batter, ¼ cup for topping)
  • 1 can (4 oz) diced green chiles
  • 2 large eggs, room temperature
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Shred the cheddar cheese. Set aside ¼ cup for topping.
  3. Drain the whole kernel corn in a fine-mesh strainer.
  4. In a large mixing bowl, whisk the eggs until light and frothy (about 30 seconds).
  5. Add sour cream and melted butter to the eggs; whisk until smooth and well combined.
  6. Stir in the drained whole kernel corn and creamed corn until evenly distributed.
  7. Add Jiffy corn muffin mix, salt, and pepper. Stir gently until just combined (do not overmix). Fold in 1¼ cups shredded cheddar and diced green chiles.
  8. Pour batter into prepared dish. Spread evenly with a rubber spatula. Sprinkle reserved ¼ cup cheddar on top.
  9. Bake for 30-35 minutes, until edges are golden brown and center is set but slightly jiggly. A toothpick inserted in center should come out clean or with a few moist crumbs. If top browns too quickly, tent with foil for last 10 minutes.
  10. Let cool for 5-10 minutes before serving.

Notes

Don’t overmix the batter—a few lumps are fine. Room temperature ingredients incorporate better. Let the casserole rest before cutting to avoid a soupy texture. For a spicier version, add diced jalapeños or use pepper jack cheese. To make ahead, assemble and refrigerate up to 24 hours; add 10 minutes to baking time. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
