  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan cheese (for garnish)
  • Crusty bread for dipping (optional)

Instructions

  1. Heat the olive oil in a Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and the onion is translucent.
  2. Add the minced garlic, thyme, oregano, and red pepper flakes (if using). Cook for another minute until fragrant.
  3. Pour in the chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a gentle simmer, then reduce heat to low. Let simmer for 10 minutes.
  4. Stir in the heavy cream and chopped sun-dried tomatoes. Mix well. Let simmer for another 5 minutes, stirring occasionally. Do not let it boil.
  5. Stir in the shredded chicken. Cook for 5-7 minutes until heated through. Taste and adjust salt and pepper as needed.
  6. If using Parmesan, stir it in just before serving. Let it melt into the broth for about a minute.
  7. Ladle the soup into bowls. Garnish with fresh parsley and extra Parmesan if desired. Serve with crusty bread for dipping.

Notes

The soup will thicken as it sits. When reheating leftovers, add a splash of broth or milk to thin it back. For best results, use sun-dried tomatoes packed in oil. If using dry-packed tomatoes, rehydrate them in warm water for 10 minutes before chopping. For a dairy-free version, swap heavy cream with full-fat coconut milk. To freeze, leave out the cream and add it when reheating.
