Ingredients

Scale
  • 6 cups peeled and sliced apples (about 6 medium apples, mix of Granny Smith and Honeycrisp)
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into 1/4-inch thick slices. In a large mixing bowl, combine the sliced apples, 1/3 cup granulated sugar, 1/4 cup brown sugar, lemon juice, 1 teaspoon cinnamon, and nutmeg. Toss to coat evenly. Let the mixture sit for about 10 minutes.
  3. After 10 minutes, sprinkle 2 tablespoons of flour over the apples and toss again. Transfer the apple mixture to the prepared baking dish and spread into an even layer.
  4. In a medium mixing bowl, whisk together the rolled oats, 3/4 cup flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and salt. Pour the melted butter over the dry ingredients and stir until evenly moistened. The mixture should look like wet sand with some clumps.
  5. Sprinkle the oat crumble topping evenly over the apples. Do not press the topping down.
  6. Place the baking dish on a rimmed baking sheet. Bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbly around the edges. If the topping browns too quickly, tent loosely with aluminum foil for the last 10-15 minutes.
  7. Let the crisp cool on a wire rack for at least 15-20 minutes before serving. Serve warm, preferably with vanilla ice cream or a drizzle of heavy cream.

Notes

Don’t skip the lemon juice—it brightens the flavor and prevents browning. Use a mix of apple varieties for best results. Let the apples macerate for 10 minutes to draw out juices. Melted butter creates a more even crunch. Watch the topping to prevent burning. For gluten-free, use certified gluten-free oats and a 1:1 gluten-free flour blend. For vegan, use vegan butter.
