  • 2 ½ cups (312g) all-purpose flour
  • 1 cup (245g) pumpkin puree (100% pure, not pie filling)
  • 1 cup (240g) sourdough discard (unfed, straight from the fridge)
  • ¾ cup (150g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil (or canola, grapeseed, melted coconut oil)
  • 2 teaspoons pumpkin pie spice (or homemade: 1 tsp cinnamon, ½ tsp ginger, ¼ tsp nutmeg, ¼ tsp allspice, pinch cloves)
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ½ cup (60g) raw pepitas (plus more for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on long sides. Lightly grease parchment with oil or butter.
  2. In a large bowl, whisk together flour, pumpkin pie spice, baking soda, and salt.
  3. In a separate medium bowl, whisk together pumpkin puree, sourdough discard, brown sugar, granulated sugar, eggs, and vegetable oil until smooth and glossy.
  4. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine; do not overmix).
  5. Fold in ½ cup pepitas until evenly distributed.
  6. Pour batter into prepared loaf pan. Spread evenly. Sprinkle remaining pepitas on top and press lightly into batter.
  7. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  8. Cool in pan on a wire rack for 10-15 minutes. Lift bread out using parchment and cool completely on rack before slicing.

Notes

Use discard that is 3-5 days old for best flavor. Room temperature ingredients help the batter mix evenly. Let bread cool completely before slicing to avoid crumbling. Bread tastes even better on the second day.
