This sheet pan breakfast casserole with sausage and peppers is faster, easier, and tastier than traditional versions. Everything cooks on a single sheet pan for crispy edges, a soft center, and sweet roasted peppers.

  • 6 large eggs (room temperature)
  • 1 ½ cups whole milk
  • 1 teaspoon Dijon mustard (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • 4 cups cubed day-old bread (sourdough or French bread)
  • 1 pound breakfast sausage (links or bulk)
  • 2 bell peppers, sliced (red and yellow)
  • 1 medium onion, thinly sliced
  • 1 ½ cups shredded cheddar cheese (sharp cheddar)
  • 2 tablespoons olive oil
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a sheet pan with olive oil or cooking spray.
  2. If using sausage links, slice into ½-inch rounds. If using bulk sausage, break into small pieces. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage and cook for 4-5 minutes, breaking it up, until browned. Add sliced bell peppers and onion, cook for another 4-5 minutes until softened and slightly charred. Remove from heat.
  3. In a medium bowl, whisk together eggs, milk, Dijon mustard (if using), salt, pepper, and smoked paprika until smooth and slightly frothy.
  4. Spread cubed bread evenly on the prepared sheet pan. Pour egg mixture over bread, tossing gently to coat. Let sit for 5 minutes.
  5. Scatter cooked sausage, peppers, and onions evenly over the bread. Sprinkle shredded cheddar cheese on top.
  6. Bake for 20-25 minutes until eggs are set and cheese is melted and bubbly. Edges should be golden brown. For extra browning, broil for 1-2 minutes at the end.
  7. Let rest for 5 minutes before cutting into squares. Garnish with fresh parsley or chives if desired. Serve warm.

Notes

Use day-old bread for best texture. Pre-cook sausage and peppers to avoid sogginess. Let bread soak in egg mixture for 5-10 minutes. For make-ahead, assemble up to step 5, cover, and refrigerate overnight; add 5-10 minutes to baking time.
