  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg (freshly grated if possible)
  • ¼ teaspoon ground cloves
  • ½ cup unsalted butter, softened (1 stick)
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup fresh apple cider (not apple juice)
  • ½ cup granulated sugar (for caramel)
  • 3 tablespoons unsalted butter, cut into small pieces (for caramel)
  • ¼ cup heavy cream, at room temperature (for caramel)
  • ¼ teaspoon salt (for caramel, or more to taste)
  • ½ teaspoon vanilla extract (for caramel)

Instructions

  1. Prepare the slow cooker: Line the bottom and sides of a 6-quart slow cooker with parchment paper, letting the edges hang over. Lightly grease the parchment with butter or non-stick spray.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. Cream butter and sugars: In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  4. Add eggs and vanilla: Beat in eggs one at a time, then add vanilla extract. Scrape down the sides of the bowl.
  5. Alternate adding dry ingredients and cider: With mixer on low, add one-third of the flour mixture, then half of the apple cider. Mix until just combined. Repeat with another third of flour, remaining cider, and final third of flour. Do not overmix.
  6. Pour into slow cooker: Scrape batter into prepared slow cooker and spread evenly.
  7. Cook on low: Cover and cook on LOW for 2 ½ to 3 hours. Do not lift the lid during the first 2 hours. Cake is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Make caramel while cake cooks: In a small saucepan over medium heat, melt ½ cup granulated sugar, stirring constantly, until deep amber (about 5-7 minutes). Remove from heat.
  9. Finish caramel: Carefully whisk in butter pieces (it will bubble), then slowly pour in heavy cream while whisking. Stir in salt and vanilla. Let cool slightly.
  10. Cool and remove cake: Turn off slow cooker and let cake cool in pot for 15-20 minutes. Using parchment handles, lift cake out and transfer to a cooling rack. Cool completely or serve warm.
  11. Drizzle and serve: Drizzle caramel sauce over cake. Slice and serve with extra caramel. Optionally sprinkle with flaky sea salt.

Notes

Do not lift the lid during the first 2 hours of cooking. For the caramel, watch the sugar carefully to avoid burning. The cake tastes even better on day two. For gluten-free, use a 1:1 gluten-free baking blend. For dairy-free, use vegan butter and dairy-free heavy cream alternative.
