  • 2 cups heavy cream
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • ½ cup strong brewed coffee
  • ¼ teaspoon salt
  • Whipped cream (for topping)
  • Crushed candy canes or peppermint candies (for topping)
  • Chocolate shavings (for topping)
  • Mini marshmallows (for topping)
  • Additional candy canes for stirring (optional)

Instructions

  1. In a small bowl, whisk together the cocoa powder, sugar, and salt.
  2. Pour the whole milk, heavy cream, and strong brewed coffee into a 6-quart slow cooker. Stir to combine.
  3. Add the dry ingredient mixture to the slow cooker and whisk vigorously for about a minute until smooth with no lumps.
  4. Add the semi-sweet chocolate chips and stir once more.
  5. Cook on low for 2 hours. Do not lift the lid during cooking. After about 90 minutes, give it a gentle stir to help the chocolate chips fully incorporate.
  6. After 2 hours, turn the slow cooker to warm. Stir in the vanilla extract and peppermint extract. Start with ½ teaspoon of peppermint, taste, then add more if desired (up to 1 teaspoon).
  7. Taste and adjust sweetness or peppermint as needed. Let it sit on warm for 15 minutes and taste again.
  8. Prepare toppings: whip cream, crush candy canes in a ziplock bag with a rolling pin, and set out chocolate shavings and mini marshmallows in small bowls.
  9. Ladle the hot chocolate into mugs, leaving room for toppings. Let guests add their own whipped cream, crushed peppermint, chocolate shavings, and marshmallows. Optionally, hand each person a whole candy cane to use as a stirrer.

Notes

Start with ½ teaspoon of peppermint extract and adjust to taste; it’s potent. Cook on low only to prevent scorching. For a dairy-free version, use oat milk and coconut cream. The base can be made a day ahead (without peppermint) and reheated.
