This rich, creamy eggnog features freshly grated nutmeg and your choice of bourbon or rum for a festive holiday drink that’s surprisingly simple to make.

Ingredients

Scale
  • 6 large egg yolks (room temperature)
  • 3/4 cup granulated sugar (150 grams)
  • 2 cups whole milk (480 ml)
  • 1 cup heavy cream (240 ml)
  • 1 teaspoon vanilla extract (pure)
  • 1 whole nutmeg, freshly grated (about 1 tablespoon)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup bourbon or dark rum (240 ml)
  • Freshly whipped cream (for serving, optional)
  • Extra freshly grated nutmeg (for garnish, optional)
  • Cinnamon sticks (for stirring, optional)

Instructions

  1. Grate the whole nutmeg using a microplane or fine grater to get about 1 tablespoon. Set aside.
  2. Separate 6 large eggs, placing the yolks in a large heatproof mixing bowl. Reserve the whites for another use. Whisk the yolks lightly.
  3. Add 3/4 cup granulated sugar to the yolks and whisk vigorously until pale yellow and thickened, about 2 minutes (ribbon stage).
  4. In a medium saucepan, combine 2 cups whole milk and 1 cup heavy cream. Heat over medium until steaming with small bubbles around the edges (about 4-5 minutes), stirring occasionally.
  5. Slowly drizzle about 1 cup of the hot milk mixture into the egg yolk mixture while whisking constantly to temper the eggs. Then pour the tempered mixture back into the saucepan with the remaining milk and whisk together.
  6. Cook the custard over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-8 minutes). Do not let it boil. Aim for 160°F (71°C) on a thermometer.
  7. Pour the cooked custard through a fine-mesh strainer into a clean pitcher or bowl to remove any cooked egg bits.
  8. Stir in the freshly grated nutmeg, ground cinnamon, salt, and vanilla extract until evenly distributed.
  9. Let the eggnog cool for about 10 minutes at room temperature, then stir in 1 cup bourbon or dark rum.
  10. Cover and refrigerate for at least 2 hours, preferably overnight. Serve cold in mugs, topped with whipped cream and extra grated nutmeg if desired.

Notes

For best results, use fresh nutmeg and chill overnight. The alcohol helps preserve the eggnog. For a non-alcoholic version, omit the alcohol and add an extra teaspoon of vanilla extract. Store in the refrigerator for up to 5 days.
