A simple and delicious slow cooker recipe featuring tender chicken breasts cooked in a creamy ranch and cream cheese sauce, served with egg noodles for a comforting weeknight meal.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 8 ounces egg noodles
  • 1 cup chicken broth or water
  • Optional garnish: fresh parsley or chives, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels and place them in the bottom of the slow cooker.
  2. Sprinkle the ranch seasoning evenly over the chicken and rub it in lightly.
  3. In a bowl, soften the cream cheese by stirring it with a fork until smooth.
  4. Pour the chicken broth over the chicken and ranch seasoning, then dollop the softened cream cheese on top.
  5. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender and easily shredded.
  6. Shred the chicken directly in the slow cooker using two forks and stir to coat with the creamy sauce.
  7. Cook the egg noodles separately according to package instructions (about 7 to 9 minutes), then drain well.
  8. Stir the cooked noodles into the slow cooker mixture and heat for an additional 5 minutes if needed.
  9. Garnish with chopped parsley or chives before serving.

Notes

Softening the cream cheese before adding prevents lumps and ensures a smooth sauce. Cook egg noodles separately to avoid sogginess and add them at the end. Adjust salt carefully as ranch seasoning varies in saltiness. Leftovers taste better the next day after flavors meld. To thicken sauce, cook uncovered for 15 minutes or add a cornstarch slurry.
