These creamy, high-protein overnight oats are made with cottage cheese and peanut butter for a natural protein boost. Ready in 5 minutes, they are perfect for meal prep and keep you full until lunch.

  • 1 cup cottage cheese (small curd, full-fat or low-fat, about 225g)
  • 1 cup milk (any kind, 240ml)
  • 2 tablespoons creamy peanut butter (32g)
  • 1 tablespoon maple syrup or honey (15ml)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 ripe banana
  • 2 cups rolled oats (old-fashioned oats, 180g)
  • 2 tablespoons chia seeds (optional)

Instructions

  1. Blend the base: Add cottage cheese, milk, peanut butter, maple syrup, vanilla extract, and salt to a blender. Blend on high for 30-45 seconds until completely smooth and creamy.
  2. Mash the banana: In a medium bowl or directly in your mason jar, mash the ripe banana with a fork until mostly smooth with a few small chunks.
  3. Combine everything: Add rolled oats and chia seeds (if using) to the bowl with the mashed banana. Pour the blended cottage cheese mixture over the top. Stir until fully combined.
  4. Divide into jars: Pour the mixture evenly into four mason jars or airtight containers, leaving about an inch of space at the top.
  5. Refrigerate overnight: Place the jars in the refrigerator for at least 6 hours, preferably overnight.
  6. Serve: In the morning, stir the oats. Serve cold or microwave for 60-90 seconds if desired. Top with sliced banana, a drizzle of peanut butter, or other toppings.

Notes

Do not skip blending the cottage cheese for a creamy texture. Use room temperature ingredients for smoother blending. Oats are best within 3 days. Toast oats for extra flavor. Add fresh toppings in the morning to avoid sogginess.
