  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700 g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth (240 ml), preferably low sodium
  • 1/2 cup heavy cream (120 ml)
  • 4 ounces cream cheese, softened (115 g)
  • 1/2 cup grated Parmesan cheese
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Place chicken skin-side down and cook for 6-7 minutes without moving until skin is golden and crisp. Flip and cook the other side for 4-5 minutes. Transfer chicken to a plate and set aside.
  3. Reduce heat to medium. Add butter to the skillet and let it melt, then add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Sprinkle in Italian herbs and red pepper flakes. Pour in chicken broth and bring to a gentle simmer, scraping up browned bits from the pan.
  5. Lower heat to medium-low. Add heavy cream and softened cream cheese in chunks. Stir continuously until cream cheese melts and sauce is creamy and smooth, about 3-5 minutes. Add more broth or cream if sauce is too thick.
  6. Stir in grated Parmesan cheese. Taste and adjust salt and pepper as needed.
  7. Return chicken thighs to the pan, skin side up. Cover and simmer gently for 10-12 minutes until chicken is cooked through (internal temperature 165°F / 74°C). Sauce will thicken as it simmers.
  8. Sprinkle chopped fresh basil over the top before serving.

Notes

Pat chicken dry for crispy skin. Soften cream cheese before adding to avoid lumps. Simmer sauce gently to prevent curdling. If sauce separates, whisk in a splash of broth. Do not overcrowd pan to maintain crispiness. Fresh basil added at the end preserves color and flavor.
