This creamy one-pot cheeseburger potato soup is a quick and easy 30-minute dinner that tastes like a cozy diner meal. Loaded with ground beef, potatoes, and melted cheddar, it’s a comforting crowd-pleaser perfect for busy weeknights.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 lbs Russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese, freshly shredded
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional toppings: cooked bacon crumbles, sliced green onions, extra shredded cheddar, diced pickles, sour cream

Instructions

  1. Brown the beef: Place a large pot over medium-high heat. Add ground beef and cook, breaking it up, until browned (5-7 minutes). Leave about 1 tablespoon of fat in the pot. Transfer beef to a plate and set aside.
  2. Sauté aromatics: Reduce heat to medium. Add butter to the pot and melt. Add diced onion and cook until soft and translucent (3-4 minutes). Add minced garlic and cook 30 seconds until fragrant.
  3. Make the roux: Sprinkle flour over onions and garlic. Stir constantly for 1 minute to cook out raw flour taste.
  4. Add broth: Slowly pour in chicken broth while stirring continuously to prevent lumps. Scrape bottom of pot to release browned bits.
  5. Add potatoes and beef: Stir in diced potatoes and browned beef. Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer 15-18 minutes until potatoes are fork-tender, stirring occasionally.
  6. Add milk and cheese: Reduce heat to low. Pour in milk and stir. Gradually add shredded cheddar cheese, a handful at a time, stirring constantly until each addition is fully melted before adding the next.
  7. Season and serve: Taste and adjust salt and pepper as needed. If soup is too thick, add a splash of milk or broth. Ladle into bowls and top with desired garnishes.

Notes

For best results, use freshly shredded cheddar and whole milk. Add cheese gradually over low heat to prevent clumping. For gluten-free option, substitute flour with 1 tablespoon cornstarch mixed with 2 tablespoons cold water. Soup thickens as it cools. To freeze, prepare through step 5, cool, and freeze; add milk and cheese when reheating.
