A quick and easy 5-minute prep breakfast that transforms simple ingredients into a creamy, protein-packed meal. Perfect for busy mornings, these overnight oats taste like dessert but fuel your body like a champion.

Ingredients

Scale
  • ½ cup (45g) rolled oats
  • ½ cup (120ml) milk of choice (e.g., unsweetened almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) peanut butter (creamy or crunchy, natural preferred)
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • 1 tablespoon (15ml) maple syrup or honey (optional, adjust to taste)
  • Pinch of sea salt
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, extra peanut butter drizzle, fresh berries, cinnamon

Instructions

  1. Combine the wet ingredients: In a mason jar or airtight container, add ½ cup milk, ¼ cup Greek yogurt, and 2 tablespoons peanut butter. If using maple syrup or honey, add it now. Stir until the peanut butter is mostly incorporated (small lumps are fine).
  2. Add the dry ingredients: Pour in ½ cup rolled oats, 1 scoop vanilla protein powder, and 1 tablespoon chia seeds (if using). Add a tiny pinch of sea salt.
  3. Mix thoroughly: Stir everything together until the protein powder is fully dissolved and no dry patches remain. Use a small whisk if needed to break up clumps. The mixture should look thick and creamy.
  4. Seal and shake: Put the lid on the jar and shake for about 10 seconds to ensure even distribution. Open and scrape down the sides with a spoon if needed.
  5. Refrigerate overnight (or at least 4 hours): Place the jar in the refrigerator. The oats will absorb the liquid, chia seeds will create a gel-like texture, and flavors will meld together.
  6. Add toppings and enjoy: In the morning, stir the oats (they will have thickened). If too thick, add a splash of milk. Top with desired toppings and eat cold, or microwave for 30-45 seconds if you prefer warm oats.

Notes

For best texture, use rolled oats (not quick or steel-cut). Protein powder can clump; mix with a splash of warm milk first or use a whisk. The oats will continue to thicken over time; add milk on days 4-5 if needed. Flavors improve after a day in the fridge.
