Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes, or microwave in 10-second bursts until soft.
  2. Pour 1 cup heavy cream into a medium bowl and whip with an electric mixer on medium speed until soft peaks form, about 2-3 minutes. Set aside in the fridge.
  3. In a separate bowl, beat the softened cream cheese with the hand mixer until smooth and fluffy, about 2 minutes. Scrape down the sides halfway through.
  4. Add powdered sugar and vanilla extract to the cream cheese. Beat on low until combined, then increase to medium and beat for another minute until light and creamy.
  5. Fold the whipped cream into the cream cheese mixture in thirds, using a spatula, until no white streaks remain. Be gentle to keep the mixture light.
  6. Transfer the cheesecake mixture to a serving dish and spread into an even layer. Refrigerate while making the chocolate.
  7. In a microwave-safe bowl, combine chocolate chips, butter, and 1/4 cup heavy cream. Microwave in 30-second intervals, stirring after each, until melted and smooth (about 90 seconds total).
  8. Let the chocolate ganache cool for about 5 minutes until warm but not hot.
  9. Spoon the cooled ganache into a zip-top bag and snip off a tiny corner (about the size of a pinhead).
  10. Remove the cheesecake dish from the fridge. Pipe a small circle of chocolate in the center, then pipe concentric circles around it, spacing them about an inch apart (4-5 circles total).
  11. Using a toothpick, start from the center and drag it outward through all the circles to the edge of the dish. Wipe the toothpick clean, then repeat, moving around the dish like drawing spokes of a wheel (8-10 times total).
  12. Chill the dip in the fridge for at least 30 minutes before serving to set.
