  • ½ cup (75g) fresh strawberries, chopped
  • 1 tablespoon (15ml) honey or maple syrup
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • ¼ cup (about 30g) graham crackers, crushed
  • 1 tablespoon (14g) unsalted butter, melted
  • 1 teaspoon brown sugar

Instructions

  1. Crush the graham crackers and combine with melted butter and brown sugar. Mix until evenly coated. Optionally, spread on a baking sheet and bake at 350°F (175°C) for 5-7 minutes for extra crunch. Let cool.
  2. In a medium bowl, soften cream cheese by stirring vigorously or microwaving for 10 seconds. Add Greek yogurt, vanilla extract, honey or maple syrup, and lemon juice. Whisk until smooth and creamy.
  3. Stir rolled oats and milk into the cream cheese mixture until oats are fully coated and mixture is thick but pourable. Add more milk if needed.
  4. Gently fold in chopped strawberries, keeping them intact for texture and color.
  5. Spoon the mixture into a jar or airtight container, leaving space at the top for the crumble.
  6. Seal and refrigerate for at least 6 hours or overnight to allow oats to absorb the creamy base.
  7. Before serving, sprinkle the graham cracker crumble generously on top.
  8. Optional: Add a drizzle of honey or fresh strawberry slices on top before serving. Stir in a tablespoon of milk if oats are too thick.
