Creamy Tuscan Garlic Chicken – Easy One-Pot Dinner

This creamy Tuscan garlic chicken is a one-pot wonder that comes together in about 35 minutes. With a silky garlic butter sauce, sun-dried tomatoes, spinach, and Parmesan, it’s a restaurant-quality meal that feels fancy but is easy enough for a busy weeknight.

  • 4 to 6 boneless, skinless chicken thighs (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 to 6 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 3 cups fresh spinach
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously on both sides with salt, pepper, and half the Italian seasoning. Let sit while you chop the sun-dried tomatoes and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. When shimmering, place the chicken thighs in the pan. Cook for 4-5 minutes per side until golden brown. Remove to a plate and set aside.
  3. Reduce heat to medium. Add butter to the same pan. Once melted and bubbling, add minced garlic and stir constantly for about 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and cook for another minute, scraping up any browned bits from the bottom of the pan.
  5. Pour in chicken broth and bring to a gentle simmer. Cook for 2 minutes, then pour in heavy cream, stirring constantly. Add remaining Italian seasoning and red pepper flakes if using. Simmer gently for 3-4 minutes until thickened.
  6. Add fresh spinach in handfuls and stir until completely wilted, about 2 minutes.
  7. Nestle the seared chicken thighs back into the sauce, including any juices. Spoon some sauce over the top. Reduce heat to low, cover, and simmer for 10-12 minutes until chicken is cooked through (internal temperature of 165°F).
  8. Remove lid and sprinkle grated Parmesan over the chicken and sauce. Stir gently and cook uncovered for 2 more minutes until cheese melts.
  9. Remove from heat and let rest for 5 minutes. Garnish with fresh parsley if desired.

Notes

Don’t rush the sear for best flavor. Watch the garlic carefully to avoid burning. Keep cream at a gentle simmer to prevent curdling. Grate your own Parmesan for smooth melting. Leftovers keep in the fridge for up to 3 days and can be frozen for up to 2 months. Reheat gently with a splash of broth or cream.
