  • 1 cup (100g) freshly grated parmesan cheese
  • 1 cup (50g) panko breadcrumbs (or almond flour for low-carb option)
  • 3 cloves garlic, minced
  • 4 tablespoons (60g) unsalted butter
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Chopped fresh parsley for garnish
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set a wire rack on top.
  2. In a medium bowl, combine parmesan, panko breadcrumbs, Italian seasoning, salt, and black pepper. Mix well.
  3. Pat the chicken thighs dry with paper towels to remove excess moisture.
  4. Brush each chicken thigh lightly with olive oil (about 1 tablespoon total).
  5. Press the chicken thighs, skin side down, firmly into the parmesan mixture to coat.
  6. Place the coated chicken thighs skin side up on the wire rack.
  7. Bake for 30-35 minutes until the skin is golden and crispy and the internal temperature reaches 165°F (74°C).
  8. While the chicken bakes, melt butter in a small saucepan over medium heat. Add minced garlic and cook gently for 2 minutes until fragrant but not brown.
  9. Stir in lemon juice if using, then remove from heat.
  10. Remove chicken from oven and immediately spoon the garlic butter sauce over each thigh.
  11. Garnish with chopped fresh parsley and serve immediately.

Notes

Pat chicken dry to ensure crispiness. Use a wire rack for even crisping. Broil for last 2-3 minutes if crust isn’t crispy enough, but watch closely to avoid burning. Garlic butter sauce is best served fresh and hot. Leftovers keep well for up to 3 days; reheat in oven to maintain crust.
