These crispy buffalo chicken meatball skewers are a game-day favorite, offering all the heat and tang of classic buffalo wings without the mess. Baked to juicy perfection with a golden, slightly crispy crust, they’re served with a tangy, creamy blue cheese dip that makes them irresistible.

  • 1 pound (450g) ground chicken
  • ½ cup (50g) panko breadcrumbs
  • 1 large egg, lightly beaten
  • ¼ cup (60ml) buffalo sauce, plus more for tossing
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons melted butter
  • ½ cup (120g) sour cream
  • ¼ cup (60ml) buttermilk
  • ½ cup (75g) crumbled blue cheese
  • 1 tablespoon lemon juice, freshly squeezed
  • ½ teaspoon Worcestershire sauce
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. If using a wire rack, place it on the sheet now.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, beaten egg, ¼ cup buffalo sauce, minced garlic, salt, and pepper. Mix gently with your hands until just combined.
  3. Using slightly wet hands, roll the mixture into 1½-inch balls. You should get about 16 to 18 meatballs. Place them on the prepared baking sheet, spacing them about an inch apart.
  4. Bake for 14 to 16 minutes, or until the internal temperature reaches 165°F (74°C). If not using a wire rack, flip them gently halfway through.
  5. While the meatballs bake, melt 2 tablespoons of butter in a small bowl. Stir in ¼ cup of buffalo sauce until combined. Set aside.
  6. Once the meatballs are done, transfer them to a large bowl. Pour the buffalo butter sauce over them and toss gently to coat. Let them sit for a minute to absorb the sauce. Then thread 3 to 4 meatballs onto each skewer.
  7. Return the skewered meatballs to the baking sheet. Broil on high for 2 to 3 minutes, watching closely so the sauce doesn’t burn.
  8. While the meatballs broil, whisk together the sour cream, buttermilk, lemon juice, Worcestershire sauce, and a pinch of salt and pepper in a small bowl. Fold in the crumbled blue cheese, leaving some chunks for texture. Taste and adjust seasoning.
  9. Serve immediately. Arrange the skewers on a platter with the blue cheese dip in the center. Garnish with chopped chives or celery leaves if desired.

Notes

Don’t overmix the meat to keep meatballs tender. Use a cookie scoop for even sizing. Let meatballs rest before broiling to help sauce absorb. Watch the broiler closely to prevent burning. Double the dip for extra servings. For gluten-free, use gluten-free panko or crushed pork rinds. For a milder version, cut buffalo sauce with extra melted butter and add honey.
