Ingredients

  • 1 cup granulated sugar
  • 1/4 cup unsulphured molasses
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. Combine the water and sugar in a small saucepan. Stir until the sugar starts to dissolve, about 30 seconds.
  2. Add the molasses and stir until fully incorporated.
  3. Whisk in the ground ginger, cinnamon, cloves, and salt until no clumps remain.
  4. Bring to a gentle boil over medium-high heat, about 2-3 minutes.
  5. Reduce heat to medium-low and simmer gently for 5 minutes, stirring occasionally.
  6. Remove from heat and let cool in the pan for 2-3 minutes.
  7. Optional: Strain through a fine-mesh strainer into a glass jar for a smoother syrup.
  8. Cool completely to room temperature before sealing and refrigerating.
