  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (optional)
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 tablespoons vegetable oil (or avocado/grapeseed oil)
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Prep the shrimp: If frozen, thaw under cold running water for 5 minutes, then pat very dry with paper towels. Toss shrimp with cornstarch, salt, and pepper until lightly coated. Set aside.
  2. Make the sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, sriracha (if using), and sesame oil. In a separate tiny bowl, mix cornstarch and water for slurry. Keep both near the stove.
  3. Heat your pan: Place a large skillet or wok over medium-high heat and add vegetable oil. Heat until shimmering, about 30 seconds.
  4. Cook the shrimp: Add shrimp in a single layer (cook in batches if needed). Cook undisturbed for 90 seconds until bottoms are golden brown. Flip and cook another 60-90 seconds until pink and opaque. Transfer to a plate.
  5. Sauté aromatics: Reduce heat to medium. Add a splash more oil if needed, then add minced garlic and grated ginger. Stir constantly for 30 seconds until fragrant.
  6. Add the sauce: Pour honey soy mixture into the pan. Let it bubble and reduce for about 1 minute, stirring occasionally, until glossy and slightly thickened.
  7. Thicken the sauce: Stir the cornstarch slurry, then pour into the pan while stirring constantly. Sauce will thicken immediately into a shiny glaze. Add water a tablespoon at a time if too thick.
  8. Return the shrimp: Toss cooked shrimp back into the pan with the sauce. Stir for 30 seconds until every shrimp is coated.
  9. Finish and serve: Remove from heat immediately. Sprinkle with sliced green onions and sesame seeds. Serve over steamed rice, noodles, or greens.

Notes

Pat shrimp bone-dry for best sear. Don’t overcook shrimp—they’re done when pink and curled into a loose C shape. Prep all ingredients before starting (mise en place). Watch heat to avoid burning garlic. Double the sauce if you like extra for rice. Use fresh garlic for best flavor.
