  • 12 ounces (340 grams) fettuccine or linguine
  • 2 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 grams) freshly grated Parmesan cheese
  • 2 cups (about 300 grams) shredded rotisserie chicken
  • 1/2 teaspoon salt, plus more for pasta water
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup reserved pasta water (optional)
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1 cup fresh spinach (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Use about 1 tablespoon of salt per 4 quarts of water. While the water heats up, shred your rotisserie chicken using two forks, discarding skin and bones.
  2. Cook your pasta according to package directions until al dente. Before draining, scoop out about 1 cup of the starchy pasta water and set aside.
  3. Drain the pasta but do not rinse it.
  4. In the same pot, melt the butter over medium heat. Add the minced garlic and cook for 30-45 seconds, stirring constantly, until fragrant but not brown.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir occasionally, scraping up any browned bits from the bottom. Simmer for about 2 minutes until slightly thickened.
  6. Reduce heat to low and gradually add the grated Parmesan cheese, stirring constantly until each addition is fully melted. If the sauce seems too thick, add a splash of reserved pasta water.
  7. Add the shredded rotisserie chicken to the sauce. Stir gently and let warm through for about 2 minutes. Season with salt, pepper, and red pepper flakes if using.
  8. Add the drained pasta to the pot and toss everything together. If it looks dry, add more pasta water a tablespoon at a time until glossy and well-coated.
  9. Remove from heat and stir in the fresh parsley. Taste and adjust seasoning if needed.
  10. Serve immediately in warm bowls, garnished with extra Parmesan and parsley if desired.

Notes

Reserve pasta water to adjust sauce consistency. Grate your own Parmesan for a smooth sauce. Use warm bowls to keep pasta hot. If sauce breaks, remove from heat and whisk in a splash of cold cream or milk.
