This easy crockpot sweet potato casserole with pecan streusel is a hands-off, crowd-pleasing side dish that requires only 10 minutes of prep. The slow cooker creates a tender, custard-like texture, while the buttery pecan topping adds a perfect crunch.

Ingredients

Scale
  • 3 pounds sweet potatoes (about 4–5 medium), peeled and sliced into ½-inch rounds
  • ½ cup unsalted butter, melted
  • ¾ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup pecan halves or pieces, roughly chopped
  • ½ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ¼ cup unsalted butter, cold and cut into small cubes
  • ½ teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prep the sweet potatoes: Peel and slice into ½-inch thick rounds.
  2. Layer the sweet potatoes in the crockpot: Place a single layer of sweet potato rounds in the bottom, sprinkle with some brown sugar mixture, and repeat until all sweet potatoes are used (about 3-4 layers).
  3. Mix the butter and spices: In a small bowl, whisk together melted butter, vanilla extract, cinnamon, nutmeg, and salt. Pour evenly over the layered sweet potatoes.
  4. Cook on low for 4 to 5 hours: Cover and cook on low. After about 3 hours, gently stir the sweet potatoes.
  5. Make the pecan streusel: About 30 minutes before the sweet potatoes are done, combine flour, brown sugar, cinnamon, and salt in a medium bowl. Cut in cold butter until mixture resembles coarse crumbs. Fold in chopped pecans.
  6. Add the streusel topping: Once sweet potatoes are tender, sprinkle streusel evenly over the top. Cover and cook on low for another 30 to 45 minutes until golden.
  7. Rest before serving: Turn off the slow cooker and let the casserole rest for about 10 minutes before serving.

Notes

For best results, use cold butter in the streusel and add it only during the last 30-45 minutes of cooking to prevent sogginess. Toasting the pecans beforehand deepens their flavor. The casserole tastes even better the next day.
