  • 2 tablespoons reserved ramen cooking water

Instructions

  1. Boil the Ramen: Fill a small pot with about 2 cups of water and bring to a rolling boil over high heat. Drop in the ramen block (discard the seasoning packet) and cook for exactly 2 minutes. Reserve about 1/2 cup of the starchy cooking water.
  2. Drain and Reserve Water: Pour the noodles into a fine mesh strainer set over a bowl to catch the water. Do not rinse the noodles.
  3. Whisk the Egg Mixture: In a small bowl, crack the egg and whisk until fully combined. Add the grated Parmesan and freshly cracked black pepper. Whisk again until you have a thick, pale yellow paste.
  4. Temper the Egg: While whisking constantly, slowly drizzle 2 tablespoons of the reserved hot ramen water into the egg mixture. Keep whisking until the mixture becomes smooth and slightly thinner.
  5. Combine Noodles and Sauce: Return the drained noodles to the warm pot (off the heat). Add the butter and toss until it melts and coats the noodles. Immediately pour the tempered egg mixture over the noodles and toss vigorously with tongs or forks for about 30 seconds until the sauce thickens and clings to every strand.
  6. Adjust Consistency: If the sauce looks too thick or clumpy, add another tablespoon of reserved ramen water and toss again. Aim for a creamy, velvety texture that coats the noodles without pooling.
  7. Finish and Serve: Taste and add more black pepper if desired. Serve immediately in a warm bowl with extra grated Parmesan and another twist of pepper.
