Easy Apple Cider Glazed Baked Donuts

  • 3/4 cup (150 g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup (180 ml) milk (whole, 2%, or almond milk for dairy-free)
  • 1/4 cup (60 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) apple cider
  • 1 1/2 cups (180 g) powdered sugar, sifted
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your donut pan with butter or non-stick spray, then dust with a touch of flour.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, ground nutmeg, and salt.
  3. In a separate bowl, whisk the milk, vegetable oil, eggs, and vanilla extract until smooth and well blended.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Do not overmix.
  5. Fill each cavity of the donut pan about 3/4 full with batter.
  6. Bake for 12–15 minutes until lightly golden and a toothpick inserted comes out clean or with a few moist crumbs.
  7. Let the donuts rest in the pan for 5 minutes, then transfer to a cooling rack to cool until warm but not hot.
  8. Pour the apple cider into a small saucepan over medium heat and simmer until reduced by half, about 10–15 minutes. Let cool slightly.
  9. In a bowl, whisk the powdered sugar, ground cinnamon, and a pinch of salt. Slowly add the reduced apple cider while whisking until smooth and pourable. Adjust consistency with water or powdered sugar as needed.
  10. Dip the top of each donut into the glaze, letting excess drip off. Place back on the cooling rack to let the glaze set. Optionally, drizzle a second layer once the first has dried.

Notes

Do not overmix the batter to keep donuts light and fluffy. Reduce apple cider slowly to avoid burning and achieve a thick glaze. Dip warm (not hot) donuts in glaze for best results. Use gluten-free flour and xanthan gum for gluten-free adaptation. For vegan version, substitute eggs with flax eggs and use plant-based milk and oil.
