A simple, seasonal mimosa made with apple cider and prosecco, finished with a warm cinnamon sugar rim. Perfect for fall brunches and holiday mornings.

  • 3 oz apple cider (unfiltered)
  • 3 oz prosecco or brut sparkling wine
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1 lemon wedge (or apple slice)

Instructions

  1. Combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon in a small shallow dish; mix until evenly distributed.
  2. Run a lemon wedge around the rim of a champagne flute or wine glass to moisten it.
  3. Turn the glass upside down and dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Tap off excess and set upright for about 30 seconds.
  4. Fill each glass halfway (about 3 oz) with apple cider.
  5. Slowly pour prosecco over the cider to fill the glass, pouring gently to preserve bubbles.
  6. Give the drink one or two gentle stirs with a long spoon or chopstick.
  7. Garnish with a thin apple slice or cinnamon stick and serve immediately.

Notes

Use chilled ingredients for best results. Don’t rim glasses more than an hour ahead to prevent stickiness. For a non-alcoholic version, substitute prosecco with sparkling cider or non-alcoholic sparkling wine. The ideal ratio is 1:1 cider to prosecco, but adjust to taste.
