This Easy Black Bean Mummy Taco Dip for Halloween is the appetizer that steals the show without stealing your time. It’s fun to look at, easy to make, and absolutely delicious to eat.

  • 1 can (15 oz) black beans, drained and rinsed
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons taco seasoning
  • 1 cup shredded Mexican blend cheese, divided
  • 1/4 cup sliced black olives
  • 1 small red bell pepper, diced
  • 23 green onions, sliced
  • 1 can (8 oz) refrigerated crescent roll dough
  • Tortilla chips for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain and rinse the black beans. Mash half the beans with a fork until mostly smooth but still chunky. Add the remaining whole beans to the bowl.
  3. Add the softened cream cheese, sour cream, and taco seasoning. Stir until well combined.
  4. Fold in 3/4 cup of the shredded cheese and the diced red bell pepper. Save the remaining 1/4 cup for topping.
  5. Spread the bean mixture into an oven-safe baking dish (8×8 or 9-inch round).
  6. Open the can of crescent roll dough and unroll it. Separate into triangles, then cut each triangle lengthwise into three thin strips.
  7. Lay the dough strips across the dip in a crisscross pattern, leaving small gaps to see the dip underneath. Leave a small area in the center exposed for the ‘face’.
  8. Bake for 12-15 minutes, until the dough is golden brown and puffed. If the dough browns too quickly, tent with foil.
  9. Remove from the oven and let cool for 2 minutes. Sprinkle reserved shredded cheese over the exposed dip areas. Place two black olive slices on the dip for eyes.
  10. Garnish with sliced green onions. Serve immediately with tortilla chips.

Notes

For best results, use full-fat cream cheese. The dip can be prepared a day ahead and stored in the fridge; add dough bandages just before baking. For a gluten-free version, skip the crescent dough and arrange gluten-free tortilla chips around the edge before baking.
