Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Lightly spray the exposed ends with non-stick spray.
  2. Brown the butter: Place the 1/2 cup of unsalted butter in a light-colored saucepan over medium heat. Let it melt completely, then swirl the pan occasionally. After about 5-7 minutes, when the butter turns a deep amber color and smells nutty, remove it from the heat immediately. Pour into a heat-safe bowl and let cool for about 10 minutes.
  3. Combine the wet ingredients: In a large mixing bowl, whisk together the cooled brown butter, pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and glossy.
  4. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  5. Combine wet and dry: Pour the dry ingredients into the wet ingredients. Fold together gently with a wooden spoon or rubber spatula until just combined (about 10-12 strokes). Do not overmix; a few small lumps are fine.
  6. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter a few times to release air bubbles.

  9. Make the maple glaze: While the bread is cooling, whisk together the sifted powdered sugar, maple syrup, 1 tablespoon of milk or cream, vanilla extract, and a pinch of salt. Add more milk if needed for a drizzling consistency.
