  • 45 sprigs fresh rosemary
  • 34 sprigs fresh thyme
  • 12 sprigs fresh sage (optional)
  • 8 oz (225g) salami, thinly sliced
  • 6 oz (170g) prosciutto, thinly sliced
  • 4 oz (115g) pepperoni slices
  • 8 oz (225g) sharp cheddar, cut into 1-inch cubes
  • 6 oz (170g) brie or camembert wedge
  • 4 oz (115g) goat cheese log
  • 1 cup (150g) mixed olives (green and kalamata)
  • 1/2 cup (75g) dried cranberries
  • 1/2 cup (60g) roasted almonds or pecans
  • Small bunch of red grapes, washed and separated into small clusters
  • Fresh or dried figs, halved (optional)
  • Assorted crackers (about 40-50 pieces, mix of water crackers and buttery rounds)
  • Baguette slices, toasted (optional)

Instructions

  1. Prepare your board: Place your board or platter on a clean, dry surface. Visualize the wreath shape — a ring about 2-3 inches wide around the outer edge, leaving the center empty.
  2. Create the herb base: Arrange the rosemary sprigs in a circular pattern around the outer edge of the board. Lay them with the stems pointing toward the center and the leafy ends pointing outward. Tuck smaller sprigs of thyme and sage between the rosemary to fill gaps.
  3. Layer the meats: Fold each salami slice in half, then in half again to create a small triangle or fan shape. Arrange these folded slices in a ring just inside the herbs, overlapping slightly. Loosely fold or bunch the prosciutto and place in small clusters around the ring. Add the pepperoni slices in between, laying them flat or slightly overlapping.
  4. Add the cheeses: Scatter the cheddar cubes evenly around the ring, nestling them between the meat clusters. Place the brie wedge in one section, cut side facing outward. Slice the goat cheese log into rounds about 1/2-inch thick and place them in small groups around the board.
  5. Fill with accents: Spoon the olives into small bowls or directly onto the board in small clusters. Scatter the dried cranberries and nuts in the gaps between larger items. Tuck small clusters of red grapes into empty spaces. If using figs, place them cut-side up in a few spots around the ring.
  6. Add the crackers: Arrange crackers in small stacks or fans around the outer edge of the board, just inside the herb border. Place them so they’re easy to grab without disturbing the arrangement.
  7. Final touches: Step back and look at your board. Fill any obvious gaps with extra herbs, nuts, or small cheese cubes. The goal is a full, abundant look — no bare spaces.
  8. Serve immediately or refrigerate: This board is best served within an hour of assembly. If you need to make it ahead, prepare all the ingredients separately and assemble just before serving.

Notes

Prep all ingredients the night before to save time. Assemble no more than 30 minutes before serving to keep herbs fresh and crackers crisp. The board is best served at room temperature. For a vegetarian version, skip the meats and double up on cheeses and vegetables.
