Easy Cinnamon Apple Cider Mimosa Float Recipe

A cozy, bubbly, and creamy cocktail that combines apple cider, prosecco, and vanilla ice cream for a dessert-like drink perfect for any occasion.

Ingredients

  • 1 cup (240 ml) apple cider, chilled
  • 1/2 cup (120 ml) dry sparkling wine or prosecco, chilled
  • 2 large scoops (about 1/2 cup or 120 ml) vanilla ice cream
  • 1 cinnamon stick per glass
  • 1 tablespoon (15 ml) caramel sauce (optional)
  • Thin apple slice, ground cinnamon, or star anise pod for garnish (optional)

Instructions

  1. Prepare your glass by drizzling caramel sauce inside and swirling to coat. Optionally, rim the glass with cinnamon sugar.
  2. Place one generous scoop of vanilla ice cream into the bottom of the glass.
  3. Slowly pour 1 cup of chilled apple cider over the ice cream, pouring against the side of the glass.
  4. Gently pour 1/2 cup of chilled sparkling wine over the back of a spoon into the glass to preserve bubbles.
  5. Insert a cinnamon stick into the glass and gently stir to infuse flavor.
  6. Garnish with an apple slice, a sprinkle of ground cinnamon, or a star anise pod. Serve immediately with a spoon.

Notes

Chill all ingredients and glass before assembling to prevent ice cream from melting too quickly. Use a dry prosecco or brut champagne to balance sweetness. Serve immediately; do not pre-assemble for parties. For a non-alcoholic version, substitute sparkling wine with sparkling apple cider or ginger ale.
