  • 1.5 to 2 pounds flank steak or sirloin, thinly sliced against the grain
  • 3 to 4 cups fresh broccoli florets (or frozen, added straight from freezer)
  • 1 medium yellow onion, thinly sliced
  • 4 to 5 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce (or tamari for gluten-free)
  • 1/3 cup brown sugar, packed (light or dark)
  • 1/4 cup beef broth (chicken or vegetable broth works)
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water
  • Sesame seeds for garnish (optional)
  • Thinly sliced green onions for garnish (optional)
  • Cooked white rice or brown rice for serving

Instructions

  1. Slice flank steak or sirloin into thin strips, about 1/4-inch thick, cutting against the grain. Place sliced beef in the bottom of the slow cooker.
  2. In a medium bowl, whisk together soy sauce, brown sugar, beef broth, sesame oil, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Pour mixture over beef in slow cooker. Add sliced onion on top. Stir to coat beef evenly.
  3. Cover slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2.5 to 3 hours, until beef is fork-tender.
  4. Once beef is tender, add broccoli florets to slow cooker. Stir gently into sauce. Cover and cook on HIGH for an additional 20 to 30 minutes, until broccoli is bright green and tender-crisp.
  5. In a small bowl, whisk together cornstarch and cold water until smooth. Remove lid from slow cooker and switch to HIGH (if not already). Pour cornstarch slurry into sauce, stirring gently. Let cook uncovered for 10 to 15 minutes, stirring occasionally, until sauce thickens.
  6. Serve beef and broccoli over steamed white or brown rice. Garnish with sesame seeds and sliced green onions. Drizzle extra sauce from crockpot over the top.

Notes

Slice beef when partially frozen for easier cutting. Don’t overcrowd the slow cooker if doubling the recipe. Toast sesame seeds for extra flavor. Taste sauce before adding cornstarch slurry to adjust saltiness. For fall-apart tenderness, cook beef to internal temperature of 190°F to 200°F.
