Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 4 tbsp unsalted butter, melted
  • 1 packet (about 1 oz) ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 12 slider buns (e.g., King’s Hawaiian sweet rolls)
  • 8 oz sharp cheddar cheese, sliced or shredded
  • 3 tbsp unsalted butter, melted (for brushing)
  • 1 tbsp everything bagel seasoning (optional)
  • Ranch or blue cheese dressing (for serving, optional)
  • Celery sticks and carrot sticks (for serving, optional)
  • Pickled jalapeños (for serving, optional)

Instructions

  1. Place the chicken breasts in the bottom of your crockpot. In a medium bowl, whisk together the buffalo wing sauce, melted butter, ranch seasoning, garlic powder, and onion powder. Pour the mixture over the chicken, making sure each piece is coated. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender enough to shred easily.
  2. Carefully transfer the cooked chicken to a cutting board or large bowl. Use two forks or a hand mixer on low speed to shred the chicken into bite-sized pieces. Return the shredded chicken to the crockpot and stir it into the sauce. Keep warm.
  3. Preheat your oven to 350°F (175°C). Without separating the individual rolls, carefully slice the entire pack of slider buns in half horizontally. Place the bottom half of the buns in a greased 9×13-inch baking dish. Spoon the shredded buffalo chicken evenly over the bottom buns. Top with the sliced or shredded cheese. Place the top half of the buns over the cheese.
  4. In a small bowl, combine the melted butter and everything bagel seasoning (if using). Brush this mixture generously over the tops of the buns. Cover the dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for another 5-7 minutes, until the tops are golden brown and the cheese is melted and bubbly.
  5. Let the sliders rest for 2-3 minutes before slicing. Use a sharp knife to cut between the rolls. Serve warm with ranch or blue cheese dressing, celery sticks, and carrot sticks.

Notes

Don’t skip the ranch seasoning—it thickens the sauce and adds savory depth. For extra creaminess, add a block of cream cheese to the crockpot. Toast the buns lightly before assembling to prevent sogginess. Let sliders rest before cutting for cleaner slices. Make extra sauce if you like them extra saucy.
