  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt (plus more for sprinkling)
  • 34 medium apples, various colors (Honeycrisp, Granny Smith, and Fuji work great)
  • 8 ounces sharp cheddar cheese, sliced or cubed
  • 4 ounces brie or camembert
  • 4 ounces goat cheese log
  • 1/2 cup salted almonds
  • 1/2 cup candied pecans
  • 1 cup assorted crackers (butter crackers and rosemary sea salt crackers)
  • 1/4 cup honey (for drizzling)
  • Fresh rosemary sprigs for garnish
  • Dried figs or dates (optional)

Instructions

  1. Make the Caramel Apple Dip: Place the granulated sugar in an even layer in a heavy-bottomed saucepan over medium heat. Stir gently with a wooden spoon as it begins to melt around the edges. Do not walk away—this takes about 5-7 minutes and can burn quickly. The sugar will clump at first, then smooth out into a deep amber liquid.
  2. Once the sugar is fully melted and reaches a rich amber color (think of a copper penny), add the butter pieces. The mixture will bubble vigorously—that’s normal. Stir constantly until the butter is fully melted and incorporated, about 2 minutes.
  3. Remove the pan from heat and slowly pour in the heavy cream while stirring. Again, it will bubble up, so be careful. Stir until smooth. If you see any lumps, return to low heat and stir until they dissolve.
  4. Stir in the vanilla extract and flaky sea salt. Let the caramel cool in the pan for 10 minutes, then transfer to a small serving bowl or ramekin. Sprinkle with a little more flaky salt on top. The caramel will thicken as it cools.
  5. Assemble the Charcuterie Board: Core and slice the apples into thin wedges—about 8-10 slices per apple. Toss them in a bowl with a squeeze of lemon juice if you’re not serving immediately. Arrange them in a fan pattern or small pile on one section of the board.
  6. Put the caramel apple dip bowl in the center or slightly off-center on the board. Arrange the cheddar slices, brie wedge, and goat cheese log around it. Space them out so there’s room for everything else.
  7. Fan out the crackers in small clusters around the cheeses. I like to place them near the cheese they pair best with—butter crackers near the brie, rosemary crackers near the cheddar.
  8. Sprinkle the almonds and candied pecans into any empty spaces. Add dried figs or dates if using. Drizzle a little honey over the goat cheese and brie.
  9. Tuck fresh rosemary sprigs around the board for color and that fall aroma. You can also add a few whole apples or small pumpkins for decoration.

Notes

For the apples, look for firm, crisp ones that won’t brown too quickly. Honeycrisp adds sweetness, Granny Smith gives that tart contrast, and Fuji holds up well. If you’re making this ahead, toss apple slices in a bit of lemon juice to prevent browning. The caramel can be made a day ahead and reheated gently with a splash of cream. Take the cheese out of the fridge 20 minutes before serving for best flavor.
