This easy garlic honey fermented immune booster is a simple two-ingredient recipe that uses raw honey and fresh garlic to create a versatile, budget-friendly ferment that supports immune health and adds depth to savory dishes.

  • 1 cup peeled garlic cloves (about 23 bulbs)
  • Raw, unfiltered honey (enough to fully submerge garlic)
  • Optional: fresh ginger, lemon peel, red pepper flakes, cinnamon stick

Instructions

  1. Prepare your garlic: separate cloves, peel by pressing with the flat side of a knife, and discard any with green sprouts.
  2. Chop or crush the garlic to your desired consistency (finely chopped for faster ferment, halved for milder).
  3. Place the prepared garlic into a clean, dry glass jar, filling it halfway to two-thirds full.
  4. Pour raw honey over the garlic until completely submerged, leaving about an inch of headspace. Use a chopstick to release air bubbles.
  5. Add optional ingredients (ginger, lemon peel, red pepper flakes, cinnamon) if desired, pushing them down into the honey.
  6. Wipe the jar rim clean, place parchment paper or plastic wrap over the mouth, then screw on the lid tightly. Label with the date.
  7. Store the jar in a cool, dark place (60-75°F) away from direct sunlight.
  8. Burp the jar daily for the first week by opening the lid briefly to release gas. After the first week, burp every few days; after two weeks, burp weekly.
  9. The ferment is ready to use after 2 weeks, but best at 4-6 weeks. Taste periodically to check development.
  10. Once desired flavor is reached, move to the refrigerator to slow fermentation. It will keep for months in the fridge or up to a year at room temperature if properly maintained.

Notes

Use raw, unfiltered honey for proper fermentation. Keep garlic submerged to prevent mold. Burp jar daily during first week. Discard if mold appears or if smell is off. Never microwave the ferment to preserve beneficial enzymes.
