  • 3 tablespoons unsalted butter
  • 1 package (10 ounces) mini marshmallows
  • 6 cups Rice Krispies cereal
  • ¼ teaspoon salt
  • 1 tablespoon vanilla extract
  • Candy eyes or chocolate chips (for faces)
  • Optional: powdered sugar for dusting

Instructions

  1. Line your work surface with a large sheet of parchment paper or wax paper. Lightly grease the paper with a tiny bit of butter or nonstick spray.
  2. Place a large pot over medium-low heat. Add 3 tablespoons of unsalted butter and let it melt slowly, swirling occasionally.
  3. Once the butter is fully melted, pour in the entire 10-ounce bag of mini marshmallows. Stir constantly until the marshmallows are completely melted and smooth, about 3 to 4 minutes.
  4. Remove the pot from the heat. Stir in ¼ teaspoon of salt and 1 tablespoon of vanilla extract until combined.
  5. Pour 6 cups of Rice Krispies cereal into the pot. Fold gently until every piece of cereal is coated, being careful not to crush the cereal.
  6. Let the mixture sit in the pot for exactly 2 minutes to cool slightly.
  7. Dip your fingers in a small bowl of water. Scoop up about ¼ cup of the mixture, roll into a ball, then gently flatten into an oval shape. Pinch one end to create a tail (the bottom of the ghost). Place on the parchment paper. Repeat with remaining mixture to make 12-14 ghosts.
  8. While the ghosts are still warm and slightly tacky, press in candy eyes or chocolate chips for the face (two mini chips for eyes, one larger chip for mouth).
  9. Allow the ghosts to cool completely at room temperature, about 15 to 20 minutes.
  10. Optional: Dust finished ghosts lightly with powdered sugar using a fine-mesh sieve.

Notes

Let the marshmallow mixture cool for exactly 2 minutes before shaping for the best texture. Keep a bowl of water nearby to dip your fingers in to prevent sticking. If the mixture hardens before you’re done shaping, return the pot to low heat for about 30 seconds to soften. These ghosts taste even better on the second day.
