  • 3 medium ripe bananas
  • 2 cups (180g) rolled oats
  • 1 scoop (about 30g) vanilla protein powder
  • 2 large eggs
  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup (60ml) honey or maple syrup
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips, chopped nuts, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups with cooking spray.
  2. Place the rolled oats in a blender or food processor. Pulse until they form a fine, powdery flour (about 30 seconds). Set aside.
  3. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth with a few small lumps.
  4. Add the eggs, Greek yogurt, honey (or maple syrup), and melted coconut oil (or butter) to the mashed bananas. Whisk until well combined and smooth.
  5. Sprinkle the oat flour, vanilla protein powder, baking soda, cinnamon, and salt over the wet mixture. Stir gently with a spatula or wooden spoon until just combined. Do not overmix.
  6. If using mix-ins, gently fold them into the batter now.
  7. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  8. Bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Remove the muffin tin from the oven and let it cool on a wire rack for 5 minutes. Then transfer the muffins to the rack to cool completely.

Notes

The batter will be thick, almost like cookie dough. Do not add more liquid. For best results, use room temperature ingredients. Check your protein powder as different brands absorb liquid differently. Muffins can be stored at room temperature for up to 3 days, refrigerated for up to a week, or frozen for up to 3 months.
